Pea Pesto Spread

MakeI’m a sucker for a good, easy dip or spread. It’s always good to have an array of dip/spread recipes at your fingertips when entertaining. I usually always have frozen peas on hand, so when I saw this recipe in Giada at Home, I knew I had to try it. I added fresh basil to the recipe, which gives it more of an authentic pesto flavor. Serve this with crusty bread, crackers or raw veggies and you have a delicious, easy spread to serve your guests! And since it’s not made with mayonnaise, this spread is a great choice for a picnic or barbeque… enjoy!

 

Ingredients:

1 (10-ounce) package frozen peas, defrosted

1 garlic clove

1/2 cup grated Parmesan or Pecorino Romano

3-4 large basil leaves

1 teaspoon kosher salt

1/4 teaspoon freshly ground black pepper

1/3 cup olive oil

How to:

Pulse together the peas, basil, garlic, grated cheese, salt and pepper in a food processor. With the machine running, slowly add the olive oil until well combined, about 1 to 2 minutes. Season with additional salt and pepper, if needed. Transfer to a small bowl. Serve with crusty bread, crackers or raw veggies.
