My friend Monica passed this recipe along to me. Easy to make, light and airy, andĀ ever-so-sweet from the coconut, these macaroons are sure to satisfy!
(Yields 2 1/2 dozen)
Ingredients:
1/2 cup egg whites
1 1/4 cups sugar
1/4 teaspoon salt
1/2 teaspoon vanilla
2 1/2 cups coconut
How to:
Preheat oven to 325 degrees. Whip egg whites to stiff peaks. Add sugar, salt and vanilla with beater at medium speed. Fold coconut into whites by hand. Drop by the teaspoon-full onto a parchment-lined baking sheet (add a little extra baking spray because they tend to stick). Bake at 325 for 12-15 minutes or until lightly browned.
