Sister-In-Law Grilled Chicken

The Crafty Hostess: MakeMy sister-in-law Tracy from Massachusetts forwarded her marinade for grilled chicken the other day.  Knowing how good she cooks, I wanted to share it!

Here is an excerpt from her email to me:

“….marinated some pounded out boneless skinless chick breasts in ….  (sorry, but I never measure anything)

Generous plop of honey

Generous plop of Boar’s Head Delicatessen Mustard

Couple shakes of ground ginger

Generous plop of fresh minced garlic

Couple shakes of crushed red pepper flakes

Olive oil to thin out a bit

Covered and put in fridge for a few hours, then brought to room temp before throwing on the grill

Was YUMMMMO, but I think I’d add a bit more mustard and crushed red pepper next time.

Then threw it on the grill.

Served w/green beans tonight, only because your brother-in-law won’t eat asparagus!

Good part is that the marinade is almost 100% sodium free.  The mustard has some sodium, but very little.  And surprisingly the honey does not have as much carbs/sugar content as I thought….so…very healthy!”
