Red Velvet Biscotti

BakeFor my daughter’s 5th birthday earlier this month, my sister-in-law made a big platter of biscotti: Red Velvet and Cookies & Cream. For me, biscotti is the perfect treat with my morning coffee – but feel free to enjoy them any time of the day! Here’s the recipe for the Red Velvet… stay tuned for the Cookies & Cream!

Ingredients:

  • 1 box (18.25 oz) red velvet cake mix
  • 1/4 cup all-purpose flour
  • 1 tablespoon vegetable oil
  • 3 large eggs
  • 1 cup white chips or nuts or chocolate chips etc.

How to:

  • Preheat oven to 350ºF.
  • In a large mixing bowl, mix together the cake mix, flour, oil, and eggs. The batter will be very thick, so you may need to use either the paddle attachment or your hands to get it to come together. Stir in the chips and nuts. Shape the dough into a rectangle about 15×4 inches on an ungreased baking sheet. If you’ve used the white chips, make sure they’re all nestled in the dough and not sticking out on top, otherwise they may turn brown.
  • Bake the rectangle for about 22 minutes. Remove from the oven and let it cool for half an hour.
  • Transfer the rectangle to a cutting board and using a serrated knife, make diagonal cuts down the rectangle, spacing about ½ to ¾ inch between each cut. Stand the cut pieces up on the baking sheet and bake at 350 for about 12 minutes. Check to see how hard the edges have become. If they don’t seem quite crisp enough and the centers are still soft, turn off the oven and let the biscotti sit in the warm oven for about 10 minutes. Remove from oven and let cool completely.

For the frosting:

Mix whipped cream cheese with confectioners’ sugar, then dip in chopped white chocolate chips.

Oh So Sweet Flower Cupcakes

BakeMy friend Monica made these for Earth Day. Very cute and oh so easy to make! Perfect for any spring or summer gathering — and the kids will want to help make them, too!

What you’ll need:

Frosted cupcakes

Oreo cookies, the chocolate part crushed up

Lollipops

Green licorice

 

How to:

Bake up a batch of your favorite cupcakes. When cool, frost them. Monica used vanilla frosting, but you could also use green or chocolate to resemble grass and/or dirt. Sprinkle the crushed Oreos on top to make it appear like a pile of dirt. In the center of the ‘dirt,’ stick the lollipop stick. At the base of the stick, put two pieces of the green licorice.

Elmo Birthday Cupcakes & Goody Bag

BakeMy middle child turned two last week, so I thought it would be cute to have an Elmo-themed birthday party for our family to celebrate his special day. My girlfriend, Christy, gave me the idea to create these adorable cupcakes, which she had made the year before for her daughter. I didn’t go too crazy with this party, since I just had a baby 4 weeks ago and I’m operating on very little sleep! However, I pulled together some adorable goody bags for the few cousins who were at the party, thanks to the dollar bins at my local Target. Check it out below!

Elmo Cupcakes 

What you need:

1 box of cake mix, any flavor

Betty Crocker cake frosting in Red — the one that comes in the spray can

Orange jelly beans for the nose

Oreo cookies for the mouth

White chocolate melting disks for the eyes

Mini M&M’s in brown for the eyeballs

Small tube of Betty Crocker white decorating icing to glue the M&M eyeballs to the melting chocolate

Elmo cupcake liners and cupcake stand which can be found at Party City or Michaels

 

How to:

Bake the cupcakes in the Elmo liners according to the directions on the box. Allow to cool completely. Frost each cupcake with the red frosting. Use a decent amount so it looks like Elmo’s fur.

To create the face:

Using the decorating icing, glue an M&M to the white chocolate melting disk. You will need two for each cupcake. Place on the top of the cupcake. Place an orange jelly bean in the center, just under the eyes. To make the mouth, take apart the Oreo cookie sandwich and cut one of the halves in half. Place on the cupcake.

 

Goody Bags

I was lucky enough to find these adorable plastic shopping bags in the dollar bins at Target. I filled them with inexpensive finds like coloring books, crayons, candy and puzzles. I topped off each bag with colorful star-patterned tissue paper.

Easy Halloween Kids Party Crafts!

CreateMy friend Monica had a Halloween party planned for our little ones this past weekend. Who knew that the Northeast would get hit with a storm from Old Man Winter — in October! She was kind enough to send me pictures of the party crafts that her boys made. After all, they still got dressed up in their costumes and had fun! If you’re looking for a fun craft to make tonight with your kids, or need some ideas for next year’s Halloween party, take a look at these.

Tootsie Roll Spider

 

Materials needed for each spider:

Four black pipe cleaners

Tootsie Roll Pop

Googly eyes

Glue

How to:

Fold and twist the pipe cleaners to make legs at the base of the lollipop. Glue eyes onto black center.

Tootsie Roll Scorpion

Using the black pipe cleaners, lollipop and googly eyes, twist and shape the pipe cleaners around the lollipop stick into the shape of a scorpion. Glue eyes onto the lollipop ‘head.’

Tissue Paper Ghost

Materials needed for each ghost:

White tissue or sheet of tissue paper

Tootsie Roll Pop

Yarn

Black marker

How to:

Wrap tissue around the head of the lollipop. Secure with yarn. Draw face with marker.

Graveyard Cake

This cake would be fun to let the kids decorate, or you can make it ahead of time and surprise the little ghouls with something creepy, but sweet!

Bake and frost a boxed cake mix of your choice. Green frosting was used here to represent the grass around the tombstones. Using melted chocolate, write ‘RIP’ on the front of several Pepperidge Farm® Milano cookies. Place them in the frosting to look like tombstones in a graveyard. Crush up several Oreo cookies or other chocolate cookie and place around each Milano cookie tombstone to represent dirt. My friend used her creativity and placed a gummy pumpkin at a few of the tombstones!
