‘Big Game’ Chili Leftovers

Do you have lots of chili leftover from yesterday’s big game? Here are a few ideas to use up leftover game day chili and make you look like a hero in the kitchen. The best part of all – the kids will love it!

Chili Elbow Mac ‘n Cheese – mix chili with cooked elbow pasta, top with shredded cheese and bake in the oven until the cheese is melted through.

 Make tacos! Fill hard taco shells with chili, shredded lettuce, diced tomatoes and Monterey Jack cheese. Finish with a dollop of sour cream!

Ingredients:

Leftover Chili
Shredded Mozzarella Cheese
Stewed Tomatoes
Ricotta or Cottage Cheese
Spaghetti Sauce

How to:

To reduce the fat content, buy low fat or non-fat cheeses and lean meat for chili. Boil noodles with a little oil (to reduce sticking), until almost ready to eat; spread a little  spaghetti sauce on bottom of lasagna pan; lay a layer of noodles over sauce. Spread chili mixture over noodles then a layer of ricotta cheese (Tip: you can also mix chili and ricotta together before spreading). Add stewed tomatoes and top with shredded mozzarella. Lay an additional layer of noodles and repeat to preferred thickness. Top with spaghetti sauce and mozzarella cheese; cover with aluminum foil and bake at 350′ for approx. 45 min or until warm and cheese is melted; Let cool for 5-10 minutes before serving.  

Chili Pita Pizza chili pizza

Ingredients:

Large whole wheat pita

Chili

Shredded cheese (whatever you prefer)

Sour cream and guacamole (optional)

How to:

For the pizza base, use a large whole wheat pita. Spread leftover chili evenly over the pita and top with shredded cheese. Broil in oven until edges of pita are crispy and the cheese is melted. Add some sour cream and guacamole if desired.
